The problem I answered was: What are the main constituents of gingerbread?
The procedure being to mark each tube with numbers and then to reduce the bread crumbed with the aid of a mortar we then realized the experiment as explained on this sheet.
For the first experiment we put bread, water, CuSO4 and NaOH.

We obtained an orange-black result which enabled us to determine the presence of starch.

In the first tube, there isn’t protein
In the second tube, there are reducing sugars
In the third tube, there is starch
To answer the problem, this bread consists mainly of reducing sugar and starch.
