The problem I answered was: What are the main constituents of gingerbread?

The procedure being to mark each tube with numbers and then to reduce the bread crumbed with the aid of a mortar then we realized the experiment as explained on this sheet.

For the first experiment we put bread, water, CuSO4 and NaOH.

We obtained a blue and green result which allowed us to know if there were proteins.

For the second experiment we put bread and water like the other, but we added benedict’s regent.

The result obtained being orange-yellow we were able to indicate the presence or not of the reducing sugars.

For the last tube we put bread, water, lugol’s solution and we put it in bain marie.

We obtained an orange-black result which enabled us to determine the presence of starch.

To conclude:

 In the first tube, there isn’t protein
 In the second tube, there is reducing sugars
 In the third tube, there is starch

To answer the problem, this bread consists mainly of reducing sugar and starch.
